Meat Cold Storage Temperatures

It’s been always a best practice that we should follow the food safety guidelines in order to serve the frozen food fresher and good in texture in meeting its safety guideline.

Storing Meat in the Freezer

To avoid any bacteria formation happen after an animal get slaughtered, we always need to ensure that we froze the frozen food immediately without delay, so that it helps to preserve the flavor and texture of food without any unwanted dangerous bacteria to occur.

To save people from getting any illness due to this, our law always emphasize that any raw meat should kept at a minimum of -18℃ to prevent formation of dangerous bacteria occur later on the food surface. Any raw meat kept more than this range is always advice not to proceed in selling since it is categorized as harmful. That’s why many food industries always choose to have blast freezers in their kitchen to help them make the raw meat froze immediately without any unwanted issues to happen.

If we follow the exact guidelines to freeze the products, the raw meat products can have longer of time expiry.

Below is the table shows the types of meat at -18℃ and its length of time.

However, for lamb and beef type meat, the length of time for this storage is quite long since the meat is partially saturated and contains hard fat while meat like pork will have lower length of time since it has lower level of saturated fat and soft fat compared to lamb and beef meat types.

Storing Meat in the Fridge

If let’s say we intend to store meat and any poultry type of products in fridge, it is always recommended that your fridge is set at a safe temperature, 4°C or below.to avoid any dangerous bacteria formation happen to the meat. Bacteria grow quickly between 4°C and 60°C, also known as the “Danger Zone.”

If you open your fridge frequently, you could also store your meat with ice or warp them in plastic wrap before icing. It is should be a best practice if we store the food froze quickly and consumed early after we bought the products.

The FIFO procedure follows 5 simple steps:

Locate products with the soonest best before or use-by dates.

Remove items that are past these dates or are damaged.

Place items with the soonest dates at the front.

Stock new items behind the front stock; those with the latest dates should be at the back.

Use or sell stock at the front first.

Simple Ways to Eliminate Fridge Odour

If you forget what’s in your fridge and how long it’s been percolating in there, no doubt you’ll open the door someday soon to find a very pungent smell. Even if you get rid of the offending culprit, the stench can still stick around for weeks afterward. In addition, food that hasn’t gone bad can still offer up an odour that seeps into your fridge. Same goes to restaurant fridge. If there were spoiled or staled ingredients being stored in the fridge. The odours stay or even affect other ingredients in the same compartment. Here’s some simple tricks to tackle and eliminate refrigerator odour.

1. Baking soda

Spread a layer of baking soda on a cookie sheet and place it in the refrigerator overnight or until the refrigerator odours are gone.

2. Fresh coffee grounds

Spread a layer of fresh coffee grounds over the bottom of a cookie sheet and place in the refrigerator overnight. A coffee smell will linger but will disappear quickly.

3. Activated charcoal

Activated charcoal is available at most pet stores. Spread a layer of activated charcoal over the bottom of a cookie sheet. Place the cookie sheet in the refrigerator for a few days, until the odours are gone.

4. Essential oil

Douse a few cotton balls with vanilla essential oil or extract and put them in the refrigerator. Close the door for 24 hours.

5. Newspaper

Stuff wads of newspaper in the fridge’s drawers and shelves and keep the door closed for a few days. Then remove the paper and wash the fridge down with a mixture of 1 cup white vinegar per 1 gallon of water.

6. Contact the manufacturer

If your fridge is fairly new and has a manufacturer’s warranty, you might be able to get assistance from the company. Contact them and have the fridge’s model number handy. If the odours is due to a product defect, free repair or replacement might be in order. For instance, if the fridge’s dual-evaporator system isn’t working, which keeps odours from transferring between compartments, you might have bad smells in various places.

Some problems can be solved with some simple maintenance while others require professional intervention. Here we have compiled a list of the possible reasons that your fridge isn’t cooling.

1. Setting is off

Check your temperature control. If the temperature control/thermostat is where it’s supposed to be then you may have a problem with an inaccurate or misaligned control. You might also discover that an accidental bump set the thermostat much warmer and your fridge problems will soon be corrected when you nudge it back into place.

2. The door isn’t sealed properly

Just like keeping the air conditioner inside your house, your fridge needs its door to be sealed tight to keep the cold on the inside. Cooling System in Refrigerators

There are three types of cooling technologies can be implemented in refrigerators:

Static
Ventilated (or No Frost)
Dynamic (or fan-assisted)

Static is the classic refrigeration technology before the others. It does not have any ventilation and the air circulates freely within. This results in uneven temperature throughout the environment in the fridge as cold air is heavier and tends to stay at lower part of the fridge. However, these refrigerators are less electricity-consuming, works silently and is the cheapest amongst the other refrigeration technology.

Contrary to static cold refrigerator, ventilated or No Frost refrigerator has ventilator that allows the air to circulate and keep an even temperature inside the entire refrigerator. The purpose is to cool products quicker and avoid the formation of moisture, which helps keep food three times longer than with a static cold technology. This system prevents bacterial growth.

Refrigerators that utilize dynamic cooling system have ventilation system and they are assisted with built-in fans. The air circulates with the help of a ventilator placed on the back side of the device. Compare to the other refrigerator technologies, dynamic cooling system is the most capable of keeping huge volume of content within cool. However, the downside would be it the cost and energy consumption. In addition, odours of different food products may mix within the fridge if are not packed safely.

SUMMARY

Static has the least capable of keeping food fresh but is the least electricity consuming, most silent and is the cheapest.
Ventilated is more capable of keeping food product fresh and prevent bacterial growth in a degree.
Dynamic have both fans and ventilation system, specialized in cooling its interior environment swiftly despite its huge volume. However, it might not be as quiet and is electricity consuming.

How Fridge Works?

Refrigerator works by circulating refrigerant inside the system while changing them between gas and liquid state. Refrigerant transitions from a low-pressure gas to a high-pressure liquid and absorbs heat from the environment. Imagine high-pressure liquid refrigerant as hand sanitizer, when you spray them on your hand, it evaporates and leaves chilling sensation on your skin.

To change the refrigerant from liquid to gas and achieve the cooling effect, it needs to be depressurized (reduce pressure) through the expansion device. Imagine this as your hair spray, you can feel there’s liquid within the aerosol can but when you release the content into open space it turns into gas.

Now we achieved the cooling effect by depressurizing liquid refrigerant into gas, we need to get the gaseous refrigerant back to its liquid state in order to keep the system running itself. Thus, we need to pressurize (increases pressure) the gaseous refrigerant into liquid again. This is where the compressor comes to use. However, it is inevitable to produce heat as side product while pressurizing the refrigerant into liquid. Ultimately, the compressor will take in cold gaseous refrigerant and turn them into hot pressurized refrigerant.

The last stage of a circulation lies here, the condenser cools off the hot and high-pressure gas. The condenser is mounted on the back of the refrigerator to release the heat off to the open environment. Once the gas is cooled off in the condenser, it changes back to liquid. The circulation repeats.

SUMMARY

Refrigerant (cold, liquid) turns into gas (depressurized) and cool off the environment .
Refrigerant (gas) is collected back to compressor for pressurization.
Refrigerant (gas, hot, high-pressure) goes through condenser to cool off.
Refrigerant turns back into liquid state once cooled off.

Compressor

Taking in refrigerant gas pressurizing it (+ pressure + heat).

Condenser

Heat rejector that takes high temperature, pressurized gas refrigerant and changes its state to liquid.

Evaporator

Absorb heat inside the fridge.

Expansion device

Capillary Tube is used as expansion device to change the state of refrigerant from liquid to gas.
